This fall favorite side dish for Crock-Pot Acorn Squash is a recipe that is so easy it is hard to even call it a recipe. Just 4 ingredients! My family loves acorn squash and this recipe made easy in the slow cooker is the way we like to fix it. The squash is simply cooked in the crock-pot with a little bit of water until you can easily stick a fork in it. Then you remove it from the crock, cut it open and scoop out the seeds. You can make this squash savory or sweet but my family likes it a little on the sweet side so we top our squash with a bit of butter and some cinnamon and nutmeg. It is almost like eating dessert and a great way to get the kids to eat their veggies.
A couple of eggs give it a little bit of a custard-like texture. What I love about this mac and cheese besides the fact that it is gooey, cheesy heaven, is that it is cooked in a crockpot. So I may try that next time because it definitely would shorten and simplify the cooking time. Too many celebrity chefs on the Food Network just seem so over the top and annoying. I want a cooking show to be about the food, not the host.
I like to keep it simple with this recipe which is just acorn squash, and a little bit of butter and brown sugar. My family eats it as a side dish with just about any meal and I have even been known to eat an entire acorn squash half for lunch. The flesh of the acorn squash comes out nice and tender in the slow cooker and the little bit of butter and brown sugar brings out the natural flavors in this beautiful vegetable. Another bonus is that this recipe is healthy too! With acorn squashes packing in a ton of fiber and a healthy dose of vitamins C, A, B-6, niacin, folate, and thiamine! And at just 4 Weight Watchers SmartPoints per serving it is diet friendly too! My husband likes to add a little bit of salt before eating as this gives a nice balance of sweet and salty while my kids prefer a sprinkle of cinnamon on theirs.
